if you read my last “foodie friday” post, you know i love Eat, Live, Run. forever i’ve had my own turkey meatball recipe, if that’s what you want to call it, but i was looking for other healthy versions with different ingredients i could play with/remix. enter, Let Me Feed You a Meatball. i followed the basic recipe and added a couple of my own bits to the mix. i mean, hey, if you’re busting your ass trying to garden, you gotta reap what you sow, literally!
my mods, i subbed almond milk for whole milk, added flat leaf parsley, and home grown purple basil to kick up the italian seasoning flavor ;p. for a beautiful step by step click here, for the A.D.D. mash-up, peep below!
totally easy, fast, and the turkey meatballs are baked, NOT FRIED! you can’t go wrong! have them by themselves, over pasta, or with salad, the options are endless :>
stuff you’ll need:
1.5 lbs ground turkey (lean but not *extra* lean)
1/2 cup milk (i used almond milk)
1/2 cup breadcrumbs
1.5 tsp salt
1 tsp dried oregano
1 28-oz can whole tomatoes in juice
1 large shallot, minced
1/4 tsp red pepper flakes
2 cloves garlic, minced
added a small bunch each of flat leaf parsley, and purple basil. i also had a lil tomato paste on hand and added a bit as i saw fit.
